Eva’s Lens: Chili Cook-off

Nine entered. One won. And I came in second!

My fiancé and I were invited to our first chili cook-off a few weeks back. This annual competition happens every Fall; around 30 people get together to watch a Patriots game (because when you live in New England and aren’t watching football on Sunday there’s something wrong with you!) and eat good food.

Being newbies and not knowing what to expect, I decided to make a bean and quinoa based chili with no meat. Shocking I know. The recipe was very simple, I let it cook for a few hours and let my crock pot do the work. I substituted cilantro for scallions and put the cooked quinoa in last minute so it wouldn’t soak up all the sauce. Other than that, follow the recipe and you’ll be golden.

Every chili was different. All chilis had meat except mine–some chicken, some turkey, some steak, some beef. Another funky one I enjoyed was the chili with the frito chip on top!

Nine crock pots lined the counters as the chefs “plated” each chili. After teams tried each chili, everyone voted on their favorite flavor.

The chili that came in first really was delicious; it was the one I voted for. There was even homemade corn bread that went on top too.

The chili cook-off made for an enjoyable afternoon of meeting new people and lots of delicious food! And to top it off the Patriots won.
